Health-packed Brown Rice 


I love making extra of a good staple food and eating an abundance of a good carbohydrate.

Who said cooking is hard?
Who said carbohydrates are bad?

My health-packed brown rice recipe turns both of these misconceptions upsidedown.  Please read ahead to cook simply and be in carbohydrate bliss!

  1. We need 2 cups of brown rice and 4 cups of water in a 3-quart pot.
  2. Bring to a boil on medium/high heat. Add 2 Tbsp coconut oil and 1 tsp of salt. Stir together. Once boiling, bring to low heat and cover.IMG_5307
  3. Then take a few cloves of garlic and half a yellow onion. Peel the garlic and mince/crush. Cut the onion in half, peel, and dice. Throw the prepared garlic and onion in the pot.  IMG_5308
  4. This will cook for 45 minutes or until all of the water is absorbed. Fluff with a fork and serve. This recipe makes 4 servings and the leftovers keep great in the fridge.

Be in awe of the glistening, almost buttery tasting rice and reap the healing benefits of fiber, healthy fat, garlic, and onion without dissatisfaction!
